When preparing the menu for The Stress Therapist's Yoga + Meditation Retreat, it seemed only natural to include a Build Your Own Buddha Bowl for lunch.
Buddha Bowls are a fairly newish culinary trend. These healthy meals are usually vegan or vegetarian and feature a whole grain, a legume, vegetables, leafy greens, and a dressing. These can be prepped ahead for a delicious lunch on the go! For the yoga and meditation lunch, I went with three inspirations for the Buddha Bowls and I am sharing the recipes for each here. The crowd favorite was by far and away the Lentil, Beet, + Wheat Berry.
Lentil, Beet, + Wheat Berry Buddha Bowl
This recipe is always a crowd-pleaser so I wasn't surprised that this was the favored Buddha bowl from the retreat.
Southwestern Buddha Bowl
East meets west with bold flavors and bright colors for a buddha bowl filled with quinoa, black beans, tomatoes, and avocado.
Greek Buddha Bowl
We put a buddhist spin on a greek classic by bringing romain, bulgur, + chickpeas together for a salad complete with whole grains and protein.
